Below is Editor Melinda Gillen’s Christmas Pastry Puff Stars recipe. Watch the video for tips on how to shape your stars.
Pastry Puff Stars
Ready roll puff pastry
1 egg (for egg wash)
Roll out your puff pastry to form eight rough squares.
Cut from each corner of the square into the middle, but cuts should not meet.
Take each left hand corner of the triangles formed and fold into meet in the middle to form a star shape.
Put a teaspoon of apricot jam into the centre of each star.
Egg wash the pastry and put into the oven at 180 degrees for around 15 minutes until the stars puff up and turn golden.
Once cooked (while still warm from the oven) glaze with the maple syrup and when cooled dust with icing sugar.
